Minato knows nothing about Yosuke aside from his abhorrence for fish, and he's honestly fine with keeping things that way. Talking to Yosuke is something he looks forward to because he can tease and joke around and be a little mean, and Yosuke reacts accordingly-- they always seem to be arguing about something, but rather than a stalemate, it feels like their conversations move forward and their back-and-forth is productive. This is the sort of conversation Minato likes best, ones where you're just chatting about nothing important, but you're learning something about the other person anyways and it's been a lot more organic than the vast majority of his conversations with people have gone, which he usually goes into with some sort of agenda in mind so he can get in and out as quickly as he can. Yosuke actually might be one of the few people he pokes at and talks to just for the sake of talking, even if they aren't really friends and he doesn't really care about becoming friends. But okay, obligatory fish mention: Minato thinks Yosuke's dislike of fish is somewhat valid (if personal opinions can be only somewhat valid...) but mostly likens it to one of those things where you hate something as a kid and never give it a chance ever again, even though tastes change as you grow up. If Yosuke gives things a second chance, he might like it? That's mostly what Minato's trying to persuade him, not the fish in particular, but giving things another chance and keeping an open mind, etc.
