Go ahead and put them as a reboot in this case!
As for the second question, in this case you're allowed to use a Recollé AU as a projected example character. We'd treat it sort of like someone who was TDM'd initially (and it's how we're treating characters who have been dropped and are returning) so you're clear to write this character with the game setting.
