Yeah it's always kinda tricky to figure out!! Like, on his stat sheet Astolfo crosses out his gender and marks it "le secret" and also refers to himself as a "maiden" in some of his Fate/Grand Order dialogue so I think inferring some kind of fluidity is reasonable.
